Healthier LCM bars

Ingredients

  • 2 cups puffed quinoa or rice

  • 1/2 cup dark chocolate chips

  • 1/2 cup desiccated coconut

  • 1/4 cup coconut oil

  • 1/4 cup maple syrup

  • 1/4 cup tahini hulled

  • pinch celtic salt

Directions

  1. Line a 20 × 20 cm baking tin with baking paper.

  2. In a saucepan on low heat, melt together the coconut oil, maple syrup & tahini until smooth

  3. Add the puffed rice, choc chips and coconut to a large mixing bowl

  4. Pour warm liquid mixture over the dry ingredients and stir well to coat. The heat will gently melt the chocolate through.

  5. Transfer to the lined tin and press down firmly

  6. Sprinkle with sea salt

  7. Place in the freezer for at least 2 hours

  8. Slice into bars and store in the freezer.
