Homemade Sausage Rolls

Ingredients

  • 2x slices wholemeal bread

  • 500g chicken mince

  • 1x zucchini, grated

  • 1x red onion, finely chopped

  • 1x garlic clove, chopped

  • Small bunch chives, chopped

  • Juice from ½ lemon

  • Pinch celtic salt

  • 3x square frozen sheets of puff pastry

  • 1 tsp olive oil for cooking

  • 1x egg, whisked.

Directions

  1. Preheat oven to 200C.

  2. Line 2x baking trays with baking paper.

  3. Blend bread to create breadcrumbs & place aside.

  4. Cook onion & garlic in 1tsp olive oil until translucent.

  5. In a large bowl, add chicken mince, grated zucchini, chopped chives, celtic salt, onion & garlic & mix thoroughly.

  6. Fold in breadcrumbs & lemon juice until mixed through.

  7. Place 1x sheet pastry on a chopping board & cut in half to create rectangles.

  8. Using a spoon, place the chicken mixture down the middle of pastry rectangle, longways.

  9. Fold both sides of the pastry over, pressing edges together and seal with a little water.

  10. Turn seam down & cut into 4, place on baking tray & brush tops with egg.

  11. Repeat until all mixture and pastry is used up.

  12. Bake in the oven for approx 30 minutes.
